When I think pancake syrup, I visualize syrup poured liberally over a stack of fluffy flapjacks. When I think birch syrup, I see a delicate drizzle spreading flavour over every bite. The best way to achieve this is to butter the pancake first so the syrup does not sink in right away. I use Amber Gold because I love the fruity honey notes and milder flavour. Add fresh or cooked blueberries or strawberries for variety.
Another Birch Breakfast Delight
Top waffles with fresh fruit, whip cream and a drizzle of Amber or Amber Gold over top. Blueberries, strawberries, mango, peaches and pears all taste great. Decadence without a huge amount of sugar!
