Red Onion Marmalade
2 tbsp olive oil
2 red onions, peeled, cut in half & cut into ½ “ slices
½ cup sugar
¼ cup red wine vinegar
¼ cup red wine
¼ cup The Canadian Birch Company Amber Birch Syrup
In a large, flat-bottomed fry pan, heat the olive oil over medium-high heat.
Add onion & sauté for 12 – 15 minutes until soft & fragrant.
Stir in sugar & cook for 1 – 2 minutes until dissolved.
Pour in red wine vinegar, red wine & The Canadian Birch Company Amber Birch Syrup.
Bring to a boil. Reduce heat & simmer for 20 – 25 minutes, until most of the liquid is gone & what is remaining is starting to thicken into syrup.
Serve with any roast meat, on the side of a grilled cheese sandwich or on top of a baked potatoe.
