When Prairie Oils and Vinegars claim “We’re not just a retail store, we’re an experience!” they weren’t kidding! On the weekend I went to there to share the sensational flavours of our Canadian Birch Syrups with their customers and staff and they shared some of their own.
It started with a question, “I wonder how the Dark Birch Syrup would taste with a flavoured olive oil since it has balsamic tones.” Bev’s husband Terry took on the task. When he returned some minutes later he had a combination that tasted divine – Dark Birch Syrup, Blueberry Balsamic Vinegar and Lemon Fused Olive Oil. We noticed that the birch syrup not only added depth to the combined flavour but it also helped to physically pull the oil and the vinegar together.
I asked him to find me a combo for the Amber Syrup. He came back with Apple Balsamic Vinegar and Mushroom and sage Fused Olive Oil. Another wonderful combination.
Now on a roll and heady from tasting success, we tried the first combination again, this time with Amber Gold Birch Syrup. All I can say is WOW! And I took home the Blueberry Balsamic Vinegar and the Lemon Fused Olive Oil. Terry was thinking Pork, Josie was thinking ice cream but I was already planning my salad.
