Birch Apple Cake

Kindred cousins...

Did you know that birch trees and apple trees share a genealogical lineage? They are distant cousin species, and perhaps as a result or just by chance, their flavors brilliantly compliment one another. Birch syrup, in fact, pairs magnificently with many different fruits and berries, but with APPLES? Pure MAGIC! 

This Birch Apple Cake is not only decadent but also very quick to prepare. The recipe is a simple cake method, no sifting or fussy steps, top with apples tossed in cinnamon sugar, baked to tenderness and then smothered in warmed Birch Whiskey Toffee Sauce. YUMM-O!

This is a hearty dessert that pairs well with meals featuring roasted meats. A great option for Sunday dinner!

 Birch Apple Cake

RECIPE

 

Preheat: 375 F

Serves: 9

Prep Time: 25 mins

Prep Notes: Grease a 9 inch spring form pan.

We found that the cake cooks faster than the apples, so we recommend cutting apples into smaller chunks or keep as thicker slices but par cook them in a glass bowl in the microwave for 3 minutes before placing on top of the cake for baking. This will help to avoid the cake getting too dry while waiting for the apples to reach desired tenderness.

HINT: Granny Smith or Sugar Crisp apples work the best

Ingredients:

Method:

 2 cups Flour

4 tsp Baking Powder

1/4 tsp Salt

1/4 cup White Sugar

4 Tbsp Unsalted Butter, softened

1/5 tsp Vanilla Extract

1 Egg

1 cup 2% Milk

3 medium Apples

1 tsp Cinnamon

1/4 cup White Sugar

1 Tbsp Brown Sugar

212 ml Birch Whiskey Toffee Sauce

  1. Preheat the oven 375 degrees.
  2. Grease a 9-inch spring form pan or metal baking dish. Set aside.
  3. In a large mixing bowl, stir together the flour, baking powder, sugar and salt. Make sure to combine well as there won't be much mixing after the wet ingredients are added.
  4. Next, using a pastry blender or a fork gently cut the soft butter into the flour mixture. Making sure to incorporate it until there are no large lumps. The mixture should represent pea sized meal.
  5. Next, add a whisked egg, vanilla and milk.
  6. Gently fold everything together until the batter forms. It will be thick and stiff but this is normal. The juice from apples will moisten the cake as it bakes.
  7. Next, core, peel and slice 3 medium sized apples.
  8. To judge size of slices, you should get about 4 slices per quarter of the apple. Cut into 1 inch chunks.
  9. In a separate mixing bowl, add the apples, cinnamon, white sugar and brown sugar. Toss until the apples are evenly coated.
  10. Next, pour the batter into the spring form pan. Place the apple mixture on top, spread evenly and give the apples a gentle pat to press them slightly into the batter beneath. Don't press too hard. This step is just to bond the bottom layer of apples to the batter.
  11. Bake for 40 minutes, until a toothpick inserted comes out clean and the apples reach desired tenderness.
  12. Remove from the oven and cool for 10 minutes.
  13. Open a 212 ml jar of Birch Whiskey Toffee Sauce. Fill a small mixing bowl with 2 cups of hot tap water, and place the jar into the water. Let sit for 5 minutes, stir. HINT: This is the best way to heat up Birch Whiskey Toffee Sauce before serving.  
  14. Pour the Birch Whiskey Toffee Sauce over the apple cake. Work fast for even distribution.
  15. Serve the cake while still warm.
