A Canadian modern twist on the classic Italian Limoncello Spritzer!
On our epic 2019 trip to Italy's Amafi Coast my husband and I visited a seaside lemon grove with Chef Fiorenzo Oliveto of @lebontadelcapo where he introduced us to the art of limoncello crafting and the best limoncello we have ever tasted! So smooth....and you would think that those famous Amalfi lemons have everything to do with the outstanding flavors, and they do, but Chef Fiorenzo's method is hands down the best we've tried. If you travel to that part of Italy you must visit Lebonta del Capo restaurant for the breathtaking views of Capri from its expansive terrace. Amazingly delicious hand crafted Italian cuisine and wickedly good limoncello spritzers. Thank you Fiorenzo for a delightful experience we will never forget!
We can't get those amazing Amalfi lemons (some as big as footballs, no word of a lie!) here at home in central Canada but we can still make limoncello spritzers! And naturally we love to experiment with Birch Syrup in cocktails. If there is one fruit that balances nicely with Birch it is Lemons, so when we added a splash of our Gold Birch syrup, and realized we had a winner!

1 oz Limoncello 1-2 Tsp The Canadian Birch Company Gold Birch Syrup 2 oz Prosecco Tonic Water |
Fill a chilled glass with ice. Add Limoncello. Birch Syrup, Prosecco and a splash of tonic water. Garnish with lemon peel and a sprig of rosemary. |
