Birch Bacon Popovers

Got peeps poppin' over?

Sometimes only EASY will do! Birch Bacon Jam is very versatile. It is not just a tasty condiment to place next to or on other goodies. It can be included in recipes that call for bacon or bacon pieces such as quiche and frittatas, used as a rub for roasted meats and mixed with sour cream to make a dip.

This time, we use Birch Bacon Jam creatively as an easy make ahead appetizer. And hey, with only three ingredients this appetizer stills counts as homemade. Make ahead and store in your refrigerator for several hours or freeze several weeks in a sealed container and bake later.

Pop in the oven when guests arrive and voila! You are a hero!

Birch Bacon Pop Overs

Preheat: 350 F

Makes: 12 - 16

Prep Time: 15 minutes

1 package frozen Puff Pastry

212 ml jar Canadian Birch Company Birch Bacon Jam

1 - 8 oz. package of Cream Cheese or Goat Cheese

Cut pastry into 3 inch squares and drop a heaping teaspoon of Birch Bacon Jam on each. Top with a 1/2 inch cube of cheese. Fold pastry over diagonally. Seal the edges and use a fork to pierce the tops twice to let steam escape during cooking.

Bake at 350 F for 20 minutes until golden brown.

Serve warm with more bacon jam on the side.
