Yam Jam Casserole

Looking for an easy dish for New Years dinner or potluck party?

Delicious doesn't haver to be complicated! If you can mash yams and open a jar of Birch Bacon Jam, you are set. Pairing bacon jam with marshmallows may seem unorthodox but believe us, it is a fantastic combo!

Yam Jam Casserole

 

Preheat: 350 F

Serves: 8

Prep Time: 15 minutes

3 large yams roasted peeled & mashed

1/4 cup of melted butter or margarine

2 Tbsp of brown sugar

1/4 cup Birch Bacon Jam by The Canadian Birch Company

2 cups of mini marshmallows

(Sweet Potatoes may be used instead of yams)

1. Mix butter and brown sugar thoroughly into the mashed jams. Pour yam mixture into a greased casserole dish and spread evenly. 

2. Spread the Birch Bacon Jam on top of yams in a thin layer using more if desired. 

3. Top off with a layer of marshmallows 

4. Bake in the oven on the middle or low rack 30 minutes, watching periodically to ensure the marshmallows don't scorch. Tent greased foil over the top to prevent unwanted browning. 

Feel free to add a dash of spice such as cinnamon, ginger, or nutmeg.

Pairings

Goes well with a simple roast chicken, pork roast or glazed ham. A crisp chilled Pinot Grigio or light red Zinfandel balances out this sweet & savory dish nicely. 

Birch Cooking Tip

Even though Birch Bacon Jam is an already cooked product, it can be combined with other ingredients and cooked in the oven without loosing its flavor or texture. Birch Syrup, as Bacon Jam's primary flavoring stands on its own in the cooking process where heat enhances the flavor and caramelizes the syrup, making it an excellent rub for meat with the benefit of sealing in the juices. Try using Birch Bacon Jam as a rub for pork, ham and chicken.
